To enable or disable your online reservations on a recurring basis, go to Admin panel -> Availability -> Hours -> Online reservation hours.
Use the toggle to turn reservation on and off for specific days
Create different blocks each day by hitting the "+" signs
Use the drop downs to select the start and end times of the block
If you wish to close a certain day for online reservations (e.g. Monday) this is how the setup should look:
To exceptionally turn off your online reservations
Go to Settings -> Availability -> Hours -> Online Reservation Hours
To turn your reservations off for just one day, create an exception for the day.

You can also block specific slots. To do so:
Select the filter icon
Select and/or unselect any slot as you want to make them available (slots marked as orange are the ones that will be available online)
Turn off reservation for specific tables
Go to Floor Plan
Select the floor plan where the table you want to select
Double click on the table you want to select
On the right-hand side, enable or disable "Online reservation" for that table
